  1. 10 1/2 ozchicken breast or thigh, cut into pieces (300 grams)
  2. 1 ozgalangal, sliced (30 grams)
  3. 3 stalkslemongrass, cut into 2-inch pieces
  4. 3-4shallots
  5. 1cilantro root
  6. 1/2 teaspoonsalt
  7. 3/4 ozred bell pepper, thinly sliced (20 grams)
  8. 5cherry tomatoes
  9. 3-4kaffir lime leaves, torn
  10. 5-6culantro leaves, chopped
  11. 5 ozmixed mushrooms or your choice (140 grams)
  12. 5 ozcabbage, chopped (140 grams)
  13. 1 teaspoongranulated sugar
  14. 2 tablespoonsfish sauce
  15. 2 tablespoonslime juice
  16. 1 cupwater (250 grams)
  17. 1 cupcoconut milk (250 grams)

Cooking Instructions

    Prepare all ingredients and seasonings. Wash the vegetables and set aside. Mix the water and coconut milk together.

    Pour the coconut milk and water mixture into a pot and bring to a boil. Add the galangal, salt, shallots, lemongrass, and kaffir lime leaves.
