Ingredients

  • 1 cupwhole wheat flour
  • 1/2 cupcooking oats (Quaker oats) + a spoonful for topping
  • 1/4 cupself raising flour
  • 1/2 cupbrown sugar
  • 3-4medium sized ripe bananas (I prefer full ripe ones)
  • 1/2 cupmilk
  • 1/4 cupcooking oil (coconut, rice bran, canola)
  • 2 tspvanilla extract
  • 1 tspbaking powder
  • 1/2 tspbaking soda (if making muffins, add a pinch extra) Replace baking soda with 1.5 tsp of baking powder additional to above quantity, so total 2.5tsp
  • 1 pinchsalt
  • 1/2 tspground cinnamon
  • 1 tbspapple cider vinegar
  • Handfulchopped nuts or chocolate chips or chopped sultanas (optional)

Steps

    Preheat oven to 350F or 170C. Lightly grease your tin with coconut oil (any oil that you have used). Mix milk and vinegar and keep it on the side for 5 mins.

    If the bananas aren’t ripe then you can mash them and add few drops of lemon or vinegar and leave them for 30 mins, or cook them in a pan lightly with few drops of water, lemon/vinegar. Once they are to brown colour, they’re ready to me used. Avoid over cooking them, 30-60 seconds is good enough.

    In a bowl mix mashed bananas, milk, oil, vanilla extract and sugar either by hand or mixer on medium speed.

    In a separate bowl mix flour, oats, baking powder, baking soda, cinnamon and salt.

    Add the wet ingredients into dry ingredients, slowly until just combined with rubber spatula. Don't over mix the batter. Mix in the vinegar after this.

    Transfer the batter into your container (loaf or muffin moulds). Sprinkle some oats on top of it with some brown sugar for presentation.
    Bake for 25-30 minutes or till your knife or toothpick comes out clean (mine were done in 20 minutes so keep a check).
