Cooking Instructions

Preheat the oven to 350°F (180°C).

Sift the flour and baking powder.

Mix the cake flour, baking powder, and sugar.

In another bowl, beat the egg, then mix in the milk and vegetable oil.

Pour the liquid into the flour mixture and mix until just combined. **Do not overmix, as it will make the muffins tough.**

Fold in the blueberries.

Bake in the oven at 350°F (180°C) for 22-25 minutes.

I wanted to make blueberry muffins, but I didn't have exactly everything typically needed (especially the amount of milk).I came up with this using the juices from my frozen blueberries as part of the liquid needed for making the batter and also didn't want to take the time to separate into muffin cups. So, this is what we get.It has a muffin sort of crumble to it, but it's really no too "muffiny" so I'm just calling it a "bake". Lol.On a side note, using the juices from the frozen berries gives it a lovely purple tint through the entire thing. ;) StephieCanCook -

Hi there! Long time no see! My daughter is not eating meat anymore. I am still Adjusting my cooking life to her choice, I also stopped eating red meat and white meat. Only fish for now . No animal milk. She also decided to be a vegan in new year. Since she is still eating eggs, i said let me make some muffins, I used soy milk, and vegan butter, you can use regular milk and butter.This recipe makes 12 muffins you double the ingredients if you want to make 24 muffins instead.
