Grate a medium onion, sprinkle with a little salt and black pepper, and set aside until it releases its juices. Strain and reserve the onion, discarding the liquid.

In a food processor, combine the ground beef, egg, strained onion, garlic, parsley, bell pepper, tomato, tomato paste, salt, and spices. Process until a smooth mixture forms.

Refrigerate the mixture for 30 minutes. Shape the mixture onto skewers for grilling, using the reserved onion juice and a teaspoon of oil to help shape the kofta.

Light the charcoal and let it burn until the heat is moderate. Place the kofta skewers on the grill and turn them on all sides until fully cooked. Enjoy!
