Ingredients

  1. 150 grambasmati rice
  2. 100 Gramfresh peas
  3. 1-2Tomatoes finely chopped
  4. 2onions finely chopped
  5. 1-2green chilli finely chopped
  6. 2cloves
  7. 1 Teaspoonfennel seeds
  8. 2-3 Strandsfresh coriander leaves
  9. 1 Strandfresh green garlic
  10. 1 Teaspoonturmeric powder
  11. 1Dried red chilli
  12. To tastesalt

Cooking Instructions

    Firstly wash 2-3 times and soak basmati rice for 20 minutes. Now take A deep pan and heat 4-5 tablespoon clarified butter or ghee. and put cloves, fennel seeds, dry red chilli and cinnamon pieces one by one and roast for A minute.

    Now add finely chopped green garlic and ginger paste. Then put onions and cook on low flame until golden brown and add chopped green chillies.

    After 2-3 minutes add tomatoes and sprinkle some salt so that tomatoes get cooked faster. Keep the flame low After 2 mins add fresh green peas and finely chopped coriander leaves. Add turmeric powder and mix well.

    Then add the soaked basmati rice (after draining the excess water completely) and mix well and let it simmer for A minute then pour water.

    Let it cook without lid for few minutes. When it comes to boil check seasoning and adjust as per your taste. Once water is absorbed completely cover the lid and let it cook on lowest flame for 3-4 minutes.

    Turn off the flame and mix the cooked rice gently with A fork. Garnish with finely chopped fresh coriander leaves Serve hot as one pot meal with curd or any type of raita.

    Please note i have used fresh garlic as it's available now in winters. You can use normal garlic also. And vegetables can be added as per your taste and availability like carrots, beans, etc.
