Place 2 cups poha (flattened rice) in a bowl. Add 4 cups water and soak. Once the poha softens, drain the water.

Add salt, turmeric, and sugar to the poha and mix well. Set aside.

In a skillet, add 4 tablespoons peanuts and roast them well. Set aside.

Prepare the remaining ingredients.

Heat oil in a skillet. Once hot, add mustard seeds. When they start to pop, add the chopped onions.

When the onions are cooked, add the chopped green chilies and curry leaves. Fry for 1 minute, then add the roasted peanuts.

Mix well, then add the poha. Stir to combine thoroughly.

Add coconut, lemon juice, and chopped cilantro. Mix well. Cover the skillet and cook on low heat for 5 minutes. Your poha masala is ready.

Serve the poha masala in a serving bowl.
