Ingredients

  1. 1 cupGhee
  2. 3medium size onions(chopped)
  3. 2tbps Ginger garlic(paste)
  4. 2Veal Trotters
  5. 1 tspturmeric powder
  6. 1 tbspcoriander powder
  7. 1 tspzeera powder
  8. salt as per taste
  9. 1 tbspRed chilli powder(Spicy)
  10. 1 tbspRed Chilli powder(Kashmiri)
  11. 3/4 cupYogurt
  12. 1/2 tspWhole spice powder
  13. 1 pinchjafil powder
  14. 1 pinchjaverti powder
  15. 8-10 cupsWater
  16. Fresh coriander leaves (for garnishing)

Steps

  1. 1

    Wash and clean trotters.

  2. 2

    Take a large pot, heat ghee and add onion (grinded), fry until light brown.

    Add ginger paste, garlic paste and sauté for 2-3 minutes.

    Add trotters and give it a good mix and fry for 1-2 minutes.

    Add red chilli powder, salt and turmeric powder and sauté for 5 minutes.

    Now add 8-10 cups of water and cook on low flame until done around 3-4 hour.

    In a bowl add yogurt, whole spice powder, jafil and javerti powder and mix it well. Add this mixture in paya.

  5. 5

    And put it on simmer for 10 minutes or until desired consistency.

    Veal paye is ready, garnish with fresh coriander.
