Ingredients

2 servings
  • Rice cooker
  • 4KFC pieces bought from KFC Takeaway
  • 1 cupswashed Jasmine rice
  • 3 cupswater with 2 cubes chicken stock/ bouillon
  • 2 tbsKikkoman Soy sauce
  • 1pandan leaf (a green long leaf, has a vanilla perfume x rice)
  • 1big Red onion chopped finely, prefried for 1' with 1/2 tbs oil
  • 2 clovesgarlic smashed then chopped very finely,
  • 1thumb of fresh ginger, sliced very thinly
  • PinchSalt (soy sauce is already salty)
  • 2 bunchesBok Choy, wash (cut into half lengthwise or if
  • it's big then cut into quarter lengthwise)
  • 2 stalksgreen onion,white &green parts dice finely
  • Grinded Black pepper to put when the rice is already cooked
  • soya sauce side dish
  • in a small bowl put:
  • 2 tbsIndonesian ABC Sweet Soy sauce
  • 2small red onions, chopped finely
  • 1fresh red chili deseeded, chopped finely,
  • 1kaffir lime or lemon juice. Mix all together
  • Indonesian Kerupuk or any crunchy chips
  • cucumber sliced or fresh tomato sliced

Steps

    In a rice cooker put the rice add water then add 4 KFC fried chicken and 3 cups water (for 1 cup of Jasmine Rice) with chicken stock/bouillon cubed, pandan leaf.

    Add the fried red onion, white parts of the green onion, garlic, ginger, salt, and Bok choy cut half or 1/4 and stir. Then turn on the rice cooker.

    After 20 minutes the rice is cooked (I like to leave the cooking time extra 10' longer though the rice is already cooked). Turn off heat. On the table: take out the chicken bones and shred the chicken into pieces.Take off the pandan leaf. Taste the season. Add Kikkoman soya sauce and stir. Transfer the rice mixture into a serving big bowl. Sprinkle on top with the grinded black pepper and scatter with the Green onion.

    Soya Sauce Dip. In a small bowl put Indonesian ABC Sweet Soy sauce, red onion, fresh red chili, kaffir juice or lemon juice (add 1/2 tsp soft brown sugar if using Salty Savoury Soy sauce). Mix all then pour into a small serving jar. 🙆‍♀️To serve: put the shredded chicken with the cooked savoury rice on a serving dish. Pour on top with the soy sauce' dip. Garnish at the side plate with the crunchy Corn chips, a slice of cucumber and a slice of tomato. 🍲🍅🍋

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
