Gajar Halwa Mousse is a sinfully delicious fusion dessert which will blow your mind in just one bite and will give you the fluffiness of the mousse and the taste of gajar halwa in one glass.

Peel and grate carrots and keep aside.

Heat up the ghee in deep kadhai. Once ghee gets heated, add grated carrot. Mix well. Stirring occasionally cook until carrots get cooked on medium to low flame.

Now add milk and sugar. Mix well and cook on high flame for 7 to 8 mins. Keep stirring in between. Now lower the flame and cook till all the milk gets evaporated. Switch off the flame and let it cool down.

In a mixing bowl take prepared gajar halwa. Add cream to it. Mix well. With the help of a hand blender, blend it well to get smooth mixture. Keep the bowl in refrigerator for 10 mins.

Meanwhile prepare the mousse glasses. Take two mousse glasses. With the help of a brush apply some cream on the brim of the glasses and then garnish the brim with fine scraps of the pistachios.

Now fill glasses with the prepared mousse mixture. Sprinkle some cardamom powder and garnish with sliced almonds and pistachios.
