Ingredients

  1. 1 bowlbarley flour, about 250g
  2. 1 bowlwheat flour, about 250g
  3. 2 cupsmilk or water, as preferred
  4. 2egg whites (reserve yolks for topping)
  5. 1/2 cupolive oil or regular oil
  6. 1 tablespoonsugar
  7. 1 tablespoonactive dry yeast
  8. 1 tablespoonblack seed
  9. 1 pinchsalt
  10. For topping:
  11. Egg yolk
  12. Oats
  13. Flaxseeds or sesame seeds, as preferred

Cooking Instructions

    Mix well the milk, egg whites, yeast, sugar, black seed, and oil, then add the flour as shown in the pictures below.

    Combine the dough with water or milk. I used 1 cup of milk and 1 cup of water. It doesn't need much kneading; the important thing is that the dough is soft and sticky. Let the dough rest and rise, then punch it down and shape it into balls. Note: You can use oil while shaping the balls. Place them on a baking sheet lined with parchment paper as shown in the pictures. You can choose to flatten them or leave them as they are. I preferred to flatten them.

    Let the balls rise again, then brush them with egg yolk and top with oats, flaxseeds, or sesame seeds as you like. Place the sheet in a preheated oven until they are golden brown. Enjoy your meal!
