Beef Ribs Stew with Pickled Mustard Greens

Mince the garlic, dried shallots, and ginger separately. Wash the tomatoes and cut them into wedges. Clean the beef ribs and cut them into bite-sized pieces. Place the ribs in a bowl, add a little pepper, seasoning powder, minced garlic, and ginger. Mix well and marinate the ribs for about 20-30 minutes to absorb the flavors.

Place a pot on the stove, add 1 tablespoon of cooking oil, and heat it. Add the marinated beef ribs and stir-fry until they are browned. Pour in enough water to cover the ribs and simmer until the ribs are tender. When the ribs are almost done, heat a pan on the stove with 1 tablespoon of cooking oil. Sauté the dried shallots until fragrant. Add the tomatoes and stir-fry until soft, then add the pickled mustard greens. Season with seasoning powder to taste and stir-fry until the greens are cooked, then turn off the heat.

Add the stir-fried greens mixture to the pot of stew, cooking until the flavors are well combined. Add the dill and cook for an additional 2 minutes, then turn off the heat. Serve the beef ribs stew with pickled mustard greens hot with rice for a delicious meal.
