Ingredients

20 minutes
Serves 5 servings
  • 1 cup(about 200 grams) soaked rice (use a tea cup for measuring if you have a medium-sized pot)
  • 2medium onions
  • 2large garlic cloves
  • 1/2 pound(about 225 grams) ground beef (I used 1/4 pound/115 grams)
  • Fresh fennel greens
  • Fresh parsley
  • Spices:
  • Salt to taste
  • Ground fresh cilantro
  • Black pepper
  • Ginger
  • Chinese kebab spice (or your favorite mixed spice blend)
  • Nutmeg
  • 1 tablespoonvinegar and lemon juice
  • Small pinch of bouillon powder
  • Tomato paste
  • Ground fresh fennel greens
  • Mixed vegetables ready for stuffing, or your favorite vegetables for stuffing

    Finely chop the onions, garlic, fennel greens, and parsley together.

    In a large bowl, combine the chopped vegetables with the ground beef, soaked rice, all the listed spices, and 4 tablespoons tomato paste. Mix well by hand, then stuff the mixture into the vegetables.

    Heat 5 tablespoons of oil in a large pot. Add the stuffed vegetables and sauté briefly. Pour in enough water to cover the stuffed vegetables, add 3 tablespoons tomato paste and a little salt if desired. Cook until the vegetables are tender, then serve on a platter. Enjoy!
