Vegan cookies

First attempt at making cookies, and they worked out much better than expected! The short baking time keeps these soft in the middle making them outrageously moreish.
Next time I’ll add some dark chocolate chunks.

Measure out your ingredients.

Beat the margarine until creamy.

Add the vanilla essence, white and brown sugar and beat on the highest setting for at least 5 minutes.

If you have ground almonds, great! I didn’t so I ground whole almonds.

Combine the flour, ground almonds, bicarbonate of soda and salt in a separate bowl.

Gradually stir the flour mixture in to the first bowl until it makes a dough.

Spoon the dough out on to a baking sheet lined with greaseproof paper. Leave plenty of space as they will spread as they bake.

Bake cookies in middle of oven at 180° for 10 minutes. They’re pretty much ready to eat as soon as they come out. Enjoy!
