Ingredients

  • 1.5 cupBesan
  • as neededSalt
  • 1 pinchbaking soda
  • HandfulCoriander leaves for garnish
  • 1/2 tspCumin Seeds
  • Mustard oil for frying
  • 2 tspoil for tempering
  • 500 gmsCurd
  • 2-3 Tbspgreen chutney
  • 2 Tbsptamarind chutney

Steps

  1. 1

    Take besan in a bowl and add soda and salt. Add water little by little to make a lumpfree batter. Consistency should be thick.

  2. 2

    Heat the oil in a kadhai and drop 1 tsp batter into hot oil to check if it’s ready to fry.

  3. 3

    Deep fry balls like dumplings till light golden brown in color and take it out from the oil.

  4. 4

    Boil 5-6 cups of water in a pan and add 1/2 teaspoon salt.

  5. 5

    Drop 8-10 balls at a time in hot water and take it out from the hot water after 30 seconds.

  6. 6

    Take curd in a bowl and beat well.

    Now add green chutney and salt into beaten curd. Then add soaked Phulki into it and mix it well.

  7. 7

    Heat oil and temper with cumin seeds. add tempered ingredients into phulki and mix it well.

  8. 8

    Dahi phulki is ready and serve chilled.
