Spicy Sour Gochujang Tofu Soup

Hubby went to Winco store a month ago before quarantine and lockdown. Accidentally he bought the wrong tofu. Since he loves to eat vegetarian he bought lots of tofu from Costco. But during this pandemic seemed like Costco run out the tofu. Usually we used to cook the firm tofu. But this tofu the one he bought from Winco was the silky one. Once he tried to pan fried it, but it turned into horrible taste. Since then he never cooked it no more. I tried myself to ate it as a dessert by husband likes it and so do I. This soup little sour, I don’t know I was craving of spicy and sour soup. But believe me the spicy and sour blends together makes a perfect flavor. I can say it’s a kind of a refreshing soup. So if any of you interested to try here is the recipe.

Ingredients

  1. 1packed tofu (firm or silky)
  2. 1/4 sliceonion (thinly sliced)
  3. 1 tbspgochujang paste (you can find it in any Asian store or Smith’s store)
  4. 1/2 tspginger powder (you can use the fresh ginger slices)
  5. 1/2 tspgarlic powder (you can reply with minced garlic)
  6. 1 tsppaprika powder
  7. 1 tbspsoy sauce
  8. 1 tspmushrooms powder (optional)
  9. 1 tspcayenne powder(optional, you can skipped if you don’t like spicy)
  10. 1/2 tspground black pepper
  11. to tasteSalt
  12. Squeezeslemon or 1 tbsp lemon juice (optional)
  13. 4 cupwater (veggies or non veggies broth)
  14. Green onion for garnish
  15. Sesame oil
  16. Oil

Cooking Instructions

    Using a pan heat up little oil, then sauted the onion.

    Add ginger, garlic, black pepper, gochujang paste, paprika, mushrooms powder, cayennes pepper and water.

    Let them boil and simmer until the gochujang is dissolved.

    Add tofu, soy sauce and salt to taste. Cook for another 3-4 minutes. Lastly add a few drops of sesame oil and lemon juice, then turn off the heat and serve. Don’t forget to sprinkle green onion as a garnish. Enjoy!
