Ingredients

8 people.
  • 3 cupscooked (!) Chickpeas (Garbanzo beans)
  • To take the Chickpeas skins:
  • Hot water (if needed)
  • 3 tbsTahini paste made from toasted Sesame seeds
  • 2Garlic cloves, minced
  • 1 tspSea salt
  • 1/2 tspblack pepper
  • 2 tbsExtra Virgin Olive Oil
  • 1 1/2 tbsLemon juice
  • 1-2 tbsGreek Yoghurt to thicken Hummus
  • 3fresh basils
  • 1 pinchSumac powder
  • Ice cubes help in whipping the hummus into a creamier texture
  • To smoothie hummus run food processor food 4'-5',
  • adding a tiny bit of hot water as it's running to help to smooth

Steps

    Soak the dry chickpeas in a large bowl with plenty of water for at least 8 hours or overnight.Drain and place them in medium sized heavy cooking pot.Cover with water by about 2 inches.Bring to a boil then reduce heat & simmer for 1 1/2 - 2 hrs with the lid slightly ajar (allowing some steam to escape) until well-cooked & tender, break apart easily, end up with 3 cups of cooked chickpeas.even if using canned chickpeas, give them a quick 20' simmer in plenty of water to help soften them some more.

    How to peel the chickpeas: cover the cooked chickpeas in hot water and add 1 1/2 tsp baking soda. Leave for a few minutes. Take a handful of chickpeas and rub under running water to remove the skins. Discard skins. Let the chickpea cool completely before using.

    Puree the chickpeas in a food processor: Dry them well then add them to the bowl of a food processor that's fitted with a blade. Run the processor until the chickpeas turn into a smooth powder-like paste.

    While the food processor is running, add 2 ice cubes(help in whipping the hummus into a creamier texture), Tahini sauce, garlic, salt, black pepper, 3 leaves basils, Greek yoghurt and lemon juice. Blend for 4' or so.Check, and if the consistency is too thick still, run processor and slowly add a little hot water. Blend until you reach desired silky smooth consistency. At this point, you can cover and refrigerate the hummus for an hour or so before serving.

    Transfer to a serving bowl and add 2vtbs extra virgin olive oil and a few sprinkles with Sumac on top or Parsley. To thicken the hummus is 1-2 tbs Greek Yoghurt right in the food processor and blend. Eat hummus with Pita bread, along side Baba Ganoush, Tabouli. Or as a side like lift a Kabobs, Lamb chops, Greek Souvlaki or for breakfast toasts!

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
