A great combination of chili and mac-n-cheese, two hearty classics. This meal comes together quickly and easily. Great to make as the weather starts to get chilly. It's also pretty easy to incorporate some extra veggies into here...you can add some diced carrot in with the peppers and onions or add some diced zucchini in with the pasta.

Ingredients

6 servings
  • 1 tbsp.olive oil
  • 1 lb.ground beef (or ground turkey)
  • 3 clovesgarlic, minced
  • 1small onion, diced
  • 1small bell pepper, finely diced
  • 1 can (14.5 oz.)fire roasted diced tomatoes, undrained
  • 1 can (16 oz.)kidney beans, drained and rinsed
  • 1 tbsp.chili powder
  • 1 1/2 tsp.cumin
  • 1 tsp.brown sugar
  • 1/2 tsp.each oregano, salt, pepper
  • 1/4 tsp.each onion powder, garlic powder, smoked paprika
  • dashWorcestershire sauce
  • 3 cupsunsalted chicken broth
  • 1 can (8 oz.)unsalted tomato sauce
  • 2 cupselbow pasta (or other small pasta shape)
  • 4 oz.diced American cheese

Steps

  1. 1

    Heat oil in a large pot over medium heat. Add in the onion and pepper. Cook until onion is translucent. Then add the garlic and cook a minute or so more, until fragrant. Add the ground beef. Continue to cook, breaking up the meat as you go, until the meat is cooked through. Drain excess fat, if needed.

    Stir in the diced tomatoes, kidney beans, brown sugar, Worcestershire sauce and the multiple seasonings. Increase the heat to med-high and add the broth and tomato sauce. Bring to a boil.

    Once it reaches a boil, stir in the pasta. Decrease heat and let it simmer, stirring often, until the pasta is cooked and the liquid has greatly reduced, about 10-14 minutes. After about 8 minutes, stir in the American cheese so that it melts through while the pasta finishes cooking. Once it's done, remove the pot from the heat and let it sit 5-10 minutes, then serve it up with your favorite chili toppings.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
