Aloo in green chutney pulau

To make pulao stock: pour ghee into a heavy kadhai, Once ghee is hot pour in vegetable stock, stir and cook for about 2 minutes. Add red chilli powder, and add lime juice and cream. Stir for 1 minute; then remove from heat. Set aside.

To make chutney: grind all chutney ingredients with 5 tablespoons water in a blender.
In a separate bowl, pour some chutney over peeled potatoes;mix well and set aside. - 3
Fry these potatoes in oil till crispy. Mix the potatoes with the chutney.

For rice : soak rice for 1 hour, boil 6 cups of water, add all the ingredients for rice and add the drained rice, cook till the rice is soft,drain the water and keep aside.

When everything is done separate the rice to 3 parts and other mixtures to 2 parts, In a wide sause pan spread a layer of rice drizzle one portion of vegetable stock, 1 portion of aloo chutney mixture, and 1 portion of fried onions,repeat the same for each layer, pour the saffron mixture on top of the 3 rd layer of rice, place on dum for 10 minutes.
