Very Seedy Crackers

I realise that these crackers might be on the edge of what people consider it usual to eat 😂 But I’m really pleased with them. These crackers are very nutrient dense, #lowcarb #glutenfree and won’t spike sugar levels. I’ve topped mine with avocado, tomatoes and roast chicken mixed with mayo and it was yum (I suspect a lot more yum than they look)!

Mix all of the ingredients together then leave the mix to sit for ten minutes.

Once the chia seeds have absorbed the water you get a thick dough of admittedly dubious colour and consistency.

Line a baking tray with parchment then spread the mix thinly on top. Bake at 175 C for 30 minutes until crispy. Break into pieces and you’re done!
