Ingredients

  1. 1 cupsemolina
  2. 1/4 cupall-purpose flour
  3. 1/2 cupwhisked yogurt
  4. 1/2 teaspoonbaking powder
  5. 3/4 cupwater
  6. Ghee as needed for frying
  7. For the syrup
  8. 2 cupssugar
  9. 1 1/4 cupswater
  10. 1 pinchorange food color
  11. 1/2 teaspooncardamom powder
  12. 1 teaspoonlemon juice

Cooking Instructions

    In a bowl, mix semolina, all-purpose flour, and yogurt. Add water to make a thick batter and let it sit for 30 minutes so the semolina can swell properly.

    To make the syrup, heat water, sugar, and orange food color in a pan until the sugar dissolves and forms a one-string consistency. Test by taking a drop between your thumb and finger; if it forms a string, turn off the heat. Add cardamom powder and lemon juice.

    Add baking powder to the semolina mixture and mix well. The batter should have risen well. Heat ghee on high in a wide pan. Fill a cone or squeeze bottle with the batter and swirl it in circles in the ghee to make jalebis. When the jalebis rise to the top, flip them to lightly brown the other side.

    Once golden brown on both sides, remove and dip them in the syrup for 5 minutes to let the syrup soak in.

    Remove and place on a plate. Repeat with the remaining batter.

    Your crispy and delicious semolina jalebis are ready. Serve hot and enjoy the juicy jalebis.
