Ingredients

Serves 4 servings
  • For the dough:
  • 1large cup fine light bulgur (about 7 oz or 200 grams)
  • 1large cup fine dark bulgur (about 7 oz or 200 grams)
  • 1.1 lbslean ground beef or lamb (about 500 grams)
  • Salt, black pepper, red pepper, cumin
  • For the filling:
  • 2.2 lbsfinely ground beef or lamb (about 1 kg)
  • Finely chopped onion
  • Salt, black pepper, and cilantro

Steps

  1. 1

    Soak the bulgur in hot water for 15 minutes, then drain. Start kneading until it holds together, then gradually add the ground meat while kneading. Add the spices and knead until you have a smooth, firm dough.

    Prepare the filling by sautéing the onions with the ground meat.

  3. 3

    Take a portion of the dough, shape it into a ball, then flatten it. Place some filling inside and seal it closed.

    Heat oil well in a pan and fry the kibbeh until golden brown.

  5. 5

    Serve with salad and plain yogurt.
