Mike's EZ Cheesy Manicotti

I'm so stinkin' proud of my tiny students! I swear, they're the only 6, 7 and 8 year olds I know that are up at 4:30 a.m. weekly, cooking up delicious homemade dishes for our local homeless shelters here in Albuquerque. Seriously! Check em' out! 😆

This recipe was the brainstorm of one of my youngest seven year old students, Amber. Tho she quadrupled it - making 6 extra large very heavy vats of Manicotti in total. Half with onions - the other half without. Of course taking into account any potential food allergies.

I tell ya, if you enjoy Manicotti - you're seriously going to love this crazy easy incredibly cheesy hot dish! Excellent work kiddos! It was appreciated by all and literally disappeared in minutes! Again, I'm SO stinking proud of you all! Delicious work!

  1. ● For The Ricotta Cheese Mixture [all room temp]
  2. 1 PoundFresh Ricotta Cheese
  3. 1 CupShredded Parmesan Cheese [+ reserves for topping]
  4. 1 CupShredded Mozzarella Cheese [+ reserves for topping]
  5. 1/2 (8 oz)Package Philadelphia Cream Cheese
  6. 1/2 CupFresh Parsley [+ reserves for topping]
  7. 1/2 CupFresh Chives [+ reserves for topping]
  8. 1/4Fresh Basil [+ reserves for topping]
  9. 1 tbspDried Oregano [+ reserves for topping]
  10. 1LG Egg
  11. 1 tspFresh Ground Black Pepper [+ reserves for topping]
  12. ● For The Spaghetti Sauce
  13. 2 (1 Pound)Jars Spaghetti Sauce [your favorite brand]
  14. 10 ClovesWhole Garlic [smashed & fine minced]
  15. 1/2 CupFresh Parsley
  16. 1/2 CupFresh Chives
  17. 1 tspFresh Ground Black Pepper
  18. ● For The Pasta
  19. 2LG Boxes EX LG Pasta Shells
  20. ● For The Topping Options
  21. as neededFine Diced Tomatoes

Steps

  1. 1

    Boil your oversized pasta shells as per manufactures directions. Usually 10 minutes. Add salt and a dash of olive oil to your water.

    Mix everything together in the Cheese Section. I usually add this mixture in a large Ziploc bag for easy mixing and piping purposes.

    Place a layer of spaghetti sauce, minced or whole garlic, oregeno, fresh basil, fresh parsley and ground black pepper into two oven safe baking sheets. Disposables work best.

    Layer pasta shells dome side up so cheese and sauce can pile deep inside and pipe on your ricotta cheese mixture. Then drizzle on more spaghetti sauce, shredded parmesan and mozzarella cheese, fresh basil, oregano and black pepper on top.

    Seal both up tightly and bake at 400° for 30 minutes. Serve with a tangy Italian salad to cut the richness of the cheeses and super thick garlic bread slices to the side. Enjoy!

My culinary specialties as an easy going Chef include Asian, Mexican, Cajun, BBQing, Grilling, Irish Pub food, Low Country foods, anything seafood related, extra spicy foods, fresh meat, extra fresh vegetables, US comfort, kid friendly and super fast, quick and easy foods.
