Ingredients

17-20 minutes.
12-15 servings
  1. 1-1/2 cupoats
  2. 1/4 cupalmonds
  3. 1/4 cuppeanuts/hazelnuts/walnut/cashew
  4. 1/2 cupunsweetened desiccated coconut plus 2 tbsp for coating
  5. 1/2 cuphoney or maple syrup
  6. 1/4th cup coconut oil
  7. 2 tbsplemon juice
  8. Zest of 1 lemon
  9. 2 tbsppoppy seeds

17-20 minutes.
  1. 1

    Melt the coconut oil and mix honey, lemon zest and lemon juice with it. Keep aside.

  2. 2

    Process oats, almonds, any other nut you are using and dried coconut into a coarse meal/flour.

  3. 3

    To the coarse flour, add the poppy seeds and all the wet ingredients, that is, the coconut oil honey lime mix. Mix well to form a soft dough. Add more honey if you like it sweeter. Add a tsp or more of coconut oil more if the dough isnt binding well.

    Divide into 12-15 small balls and roll them in the remaining 2 tbsp dried coconut flakes before digging in. Enjoy!!
