Ingredients

2 people
  1. 2red potatoes, peeled and sliced
  2. 1met link, sliced (or meat of your choice)
  3. 1/8 cuponions, diced
  4. 1/8 cupgreen bell peppers, diced
  5. 1/8 cupred bell peppers, diced
  6. 3large eggs
  7. 1/8 cupmilk
  8. 2 tbsp.Unsalted butter
  9. dasholive oil
  10. 1/8 tsp.garlic and onion powder
  11. to tasteground pepper and salt

Steps

45 minutes
  1. 1

    Heat stove top to medium-high heat

  2. 2

    In a cast iron skillet, Add two to three tablespoons of unsalted butter and melted.

  3. 3

    Peel and slice red potatoes and add to the skillet; fry for 20 to 25 minutes, or to desired doneness.

  4. 4

    While cooking potatoes; dice all vegetables and meat.

  5. 5

    Cooked the meat in olive oil, garlic powder, and onion powder for 3 minutes; set aside.

  6. 6

    In a medium bowl, beat together eggs and milk; now, add all ingredients to the egg mixture and blend together.

  7. 7

    In the cast iron skillet with the potatoes in it; (might need to add more butter)

  8. 8

    Chop up potatoes into bit size pieces, then add the egg mixture to the potatoes and scramble until desired doneness.

  9. 9

    Remove and serve with toast and fruit.
