Spinach Sauce

A very yummy and nutritious sauce. An important tip: cooking in an open pot prolongs cooking time so there is less likelihood of it becoming overcooked. Vegetables lose most of it's nutritional value when it overcooks. The only challenge in making this sauce is having a nutritional meal without having to eat raw spinach in the sauce 😉. So keep your eyes on the heat 😃.
Spinach Sauce

Vegetables lose most of it's nutritional value when it overcooks. The only challenge in making this sauce is having a nutritional meal without having to eat raw spinach in the sauce 😉. Put pot on heat source. Add oil and few cuts of onion.

Add in cut bell pepper, scotch bonnet and onions, seasoning and spices. Stir and allow to fry for five minutes on medium high heat.

Lower heat and add small quantity of stock (like 3 TBS, but in depends on the quantity of sauce you are making). Keep in mind that it's a sauce not soup.

Add in fried beef.

Add freshly washed cut spinach. It is important to wash the leaves just before adding to sauce because it will retain some of the water which will aid the cooking process.

Add the rest of the cut onion. Stir well.

Continue stirring on low heat. Do not cover pot.

Turn off heat after four minutes. Do not allow to overcook.
