Bake or slow cook the chicken breasts at 350, just till done, don't overlook. Save the broth!

I use the food processor to shred the chicken, and to dice the celery and onions fine. Put the shredded chicken in a bowl, adding the celery and onion to taste. Before adding mayo, moisten the chicken as needed with the saved chicken broth. I don't use the mayo 100% for moistening, I rely on the broth and use minimal mayonnaise.
