Steamed Oil Cake

I've done steamed cakes before and they always turn out super moist. So my oven went on strike after I had already mixed the batter (I'm a rebel - who cares about preheating? Preheating's for softies hahaha!). Then I decide to try out what a friend told me about cooking cakes in the pressure cooker. Why not? I am NOT in the mood to make pancakes with should-have-been-cake-batter! Long story short, oven complies mid-steaming (luckily I kept it on) so the cake is half steamed, half finished in the oven and, I kid you not, I'm surprised how good it turned out! I can't get enough of it! LOL! I love menu accidents that birth works of genius!

Ingredients

6 servings
  • 2 cupsflour
  • 2eggs
  • 1/2 cupvegetable oil
  • 1 cupsugar
  • 1 tablespoonvanilla essence
  • Pinchsalt
  • 1 tablespoonbaking powder
  • Water to correct consistency

Steps

  1. 1

    Put the eggs, vanilla, sugar, oil, and salt in a bowl and whisk very well until well mixed and a little bit bubbly.

    Add the flour and baking powder and beat into the mixture, adding a little water occasionally until the batter is of the right consistency for cake (you might need prior experience here or just plain good instincts).

  3. 3

    Put some water in a pressure cooker and something to place your cake pan on so it's not resting at the bottom of the pressure cooker. Heat the water to boiling.

  4. 4

    Put the batter into a cake pan that can fit into the pressure cooker and place on the support structure inside the pressure cooker.

  5. 5

    Close the pressure cooker and steam for about 20-30 minutes until your cake is well risen. Make sure the steaming water is enough so that it doesn't run dry.

  6. 6

    When the cake is well set, place in the oven at 200 degrees until it browns well (it is white when out of the steamer), around 15 minutes.

  7. 7

    Take it out and let it cool.
