Ingredients

1 hr
  • 2 piecesCod Fillet
  • LeafBanana
  • 3 stalksspring onions, cut in 1cm length
  • 1 stalklemongrass, finely chopped
  • 6cherry tomatoes, cut in a half
  • Packbaby corn, cut in 1cm length (this is optional. The reason am using it cos am clearing out my fridge)
  • Bunchbasil
  • 2kaffir lime leaves
  • 2bay leaves
  • 1egg
  • 3 tbspoil
  • Spice Paste :
  • 5shallots
  • 3garlic cloves
  • 2bird eye chilies, to get a little kick or skip
  • 5candlenuts
  • 1thumb size of ginger
  • 1thumb size of fresh turmeric or 1 tsp turmeric powder
  • 1 tspcoriander powder
  • 1 tbspsalt
  • 1 tbspsugar

    Pat dry the fish really well and set aside

    Grind the spice paste ingredients using food processor until smooth. Put of oil to loosen the texture. Heat 3 tbsp oil in a pan. Sauté the spice paste, finely chopped coriander, kaffir lime leaves and bay leaves until fragrant. Add more salt or sugar if needed. Put a side and let it cool.

    Once the spice paste is cooler, add the egg, spring onions, tomatoes, baby corn and basil and mix well.

    Grab one piece of banana leaf (the size enough to wrapped 1 cod fillet). Add 1 tbsp the paste mixture. Add the fish on top then cover the fish with 2 tbsp paste mixture then wrapped the fish and secure on both edge with clean tooth paste. Repeat the same step with the other fish. Then steamed for 30 minutes.

    Grilled the steamed fish on the grilled pan for about 10-20 minutes.

    Serve with the warm steamed rice
