I had never made a pizza before. I was inspired by Paul Rybak who had put a pizza dough recipe that he had experemented with for many years and shared it here with us all! I decided to use Paul's Dough recipe and made a complete pizza recipe with toppings! Thank you Paul, your dough recipe guided me on my journey. I wasn't familiar in measurements of grams and tweeked it a bit and used what I had on hand for ingredients. None the less, it turned out great.

Sausage & Pepperoni Pizza

Ingredients

10 to 12 min.

  1. (makes 2 pizzas)
  2. For large 20" pizza pan(s)
  3. 5 cupsAll-purpose Flower
  4. 1 Tbspactive dry yeast
  5. 2 TbspCorn meal
  6. 1 1/2 tspsalt
  7. 1 Tbspsugar
  8. 1 1/3 cupswarm water (105°F to 115°F)
  9. 2 TbspOlive oil
  10. Toppings Ingredients (double ingredients if making 2 pizzas)
  11. 2 cuppizza sauce
  12. 1 cupdiced Tomatoes from a can (well drained)
  13. Garlic Powder
  14. Minced Onion Sprinkles
  15. 1 cupchopped Black Olives
  16. 3 cupsMozzarella Cheese
  17. 2 cupsMild Chedder Cheese
  18. 1 packagePepperonis
  19. 2 cupspre cooked sausage (chopped fine)
  20. 2 cupsMushrooms (chopped)

Cooking Instructions

10 to 12 min.

    Pre cook sausage and set aside

    Using a KitchenAid Mixer, add flower, salt, sugar, corn meal and dry yeast and mix dry on #2 setting for 1 minute.

    Add Olive Oil and then slowly add warmed water to the dry ingredients and knead the dough on #2 setting for 5 minutes.

    Remove dough and knead by hand an additional 3 minutes. Dough should be a dry rubbery consistency (add 1 Tbsp of flower during mixing if to wet or add 1 Tbsp water during mixing if to dry)

    Break dough into 2 halves and roll into balls, then place in warm bowl to rise for 2 hours.

    Over a thin layer of flower, use a roller pen to roll dough flat and round to fit your pan. Place rolled dough in a hot pan coated with a layer of olive oil and poke holes in the dough with a fork.

    Sprinkle garlic powder and dry minced onion onto the pizza and add pizza sauce, sausage, olives, mushrooms. Sprinkle salt to taste then add cheese and Pepperonis.

    Place in oven and bake at 500° for ten to twelve minutes or until crust edges turn golden brown. Then serve hot.
