This is a totally gluten-free menu!
Use rice flour instead of wheat flour and mix with mashed potatoes.

Cooking Instructions

Make mashed potatoes with hot milk. Add rice flour and mix well.

Add potato starch, fine salt and knead well.

Divide into 8 portions and make a round smashed shape just like a small pancake.

Melt the butter in a pan and bake both sides until the surface becomes toasted.

Put the cake on a plate, pour some sauce on it and place some basil leaves on top for a nice & vivid presentation!

You can also make gnocchi with this. In that case, make a small oval shape and stir-fry with butter. (Boiling is not suitable, the rice flour is going to melt in hot water.)

I bought some rice flour on impulse once, but found that it wasn't made for bread baking. Since then I've been trying a lot of recipes to see if I can find a use for it.This recipe is by no means definitively complete, but I decided to upload it as a reminder anyway.Since this recipe contains quite a lot of sugar, the colour will turn out quite dark even on a pale bread setting. If you don't take it out of the bread maker early enough it tends to go the same colour as a French baguette. Please adjust the final baking time according to your own brand of bread maker. My son has allergies! And since I'm breastfeeding him, this limits what I can eat as well. But sometimes I want to enjoy bread, which I love. So I made this through trial and error. From having it fail to expand, to it expanding yet withering... I experienced a lot of failures.Please use confectionery rice flour, ones that are suited for cakes. It should be written on the package. That'll give you a nice, soft bread.Using rice flour only makes it too sticky, like mochi.
