This recipe contains quick cooking oats as i do not have rolled oats on hand. It also contains less raisins but you may adjust according to your preference. The end result is still as good - crunchy exterior with gooey interior.

Ingredients

Around 25 cookies
  1. 1 1/2 cupall-purpose flour
  2. 1/2 tspbaking soda
  3. 1 1/2 tspground cinnamon
  4. 3/4 tspsalt
  5. 230 gbutter
  6. 1 cupbrown sugar, packed
  7. 1 cupwhite granulated sugar
  8. 2 pcsmedium-sized eggs
  9. 1 tspvanilla extract
  10. 4 cupsquick cooking oats
  11. 1/4 cupraisins

Cooking Instructions

    Preheat oven at 180C. Prepare non-stick cookie pan or baking sheet lined with parchment paper.

    Cream butter and sugars. Once fluffed, add eggs and vanilla extract.

    Sift flour, baking soda, cinnamon, nutmeg and salt. Gradually add this mixture to the wet ingredients until well incorporated.

    Fold oatmeal and raisins until evenly combined.

    With an ice cream scooper, scoop dough into your pan about 2 inches apart.

    Bake for 12-15 minutes or until browned.
