How to Grind Rice Batter for Bánh Xèo from Whole Rice

Choose a dry, non-sticky rice variety. Soak the rice in water overnight to soften. Drain and rinse the rice thoroughly.

Add the rice to a blender with a little beer. Blend all 4 cans of rice with 2 cans of beer. Since the rice has soaked overnight, you don’t need to add extra water.

Blend thoroughly until the rice is finely ground.

Strain the mixture through a sieve, then blend the remaining rice solids again for a smoother batter.

Let the batter rest for 1 hour. If any clear liquid rises to the top, skim it off.

Add the green onions, turmeric powder, and egg to the batter. Season with 1 teaspoon seasoning powder and 1/3 teaspoon salt.

Mix well to make the bánh xèo batter. In my experience, this batter turns out crispier than store-bought mixes.
