Garlic Chicken - Sweet and Sour Tamarind Chicken Wings
A dish that's perfect with rice 🤤🤤🤤

Clean the chicken wings and drumsticks, rub with salt to reduce odor. Cut the wings in half (separating the drumette and wingette). Rinse and drain. Boil for 7-10 minutes. After boiling, rinse with cold water and marinate with: 3 teaspoons sugar, 2 teaspoons seasoning powder, 1 1/2 teaspoons pepper, 2 teaspoons fish sauce, 1 teaspoon MSG. Marinate for about 30 minutes. Before marinating, make two cuts in the drumsticks to help the seasoning penetrate and fry faster.

To make the tamarind sauce: Since fresh tamarind is not available this season, I use dried tamarind. Soak the dried tamarind in hot boiling water. Mash with a spoon to dissolve, then strain out the pulp. Season with sugar, fish sauce, seasoning powder, and chili sauce. Adjust to taste for a balance of sour, spicy, salty, and sweet.

Fry the chicken: Use frying batter, add a little chili powder, coat the marinated chicken, and deep fry until both sides are golden brown. Remove and drain on paper towels.

Add cooking oil, minced garlic, and shallots to a pan and sauté until fragrant, then add the tamarind sauce. When the sauce boils, reduce the heat and add the fried chicken. Stir well, and you can add a small bowl of water to adjust the consistency. Once the sauce thickens, turn off the heat and serve on a plate.

Serve with cucumber and a little cilantro on top for aroma. This dish goes very well with rice, so it might not be suitable for those on a diet. Enjoy your meal!
