Ingredients

  • 2big sized eggplant (baigan)
  • 2onions
  • 4tomatoes
  • 8-10garlic pods
  • 3-4green chillies
  • 2 tspred chilli powder
  • 2 tspdhania powder
  • 2 tspgaram masala
  • 2 tspsalt
  • 1/2 tspturmeric powder
  • 1/4 cupcoriander leaves
  • 1/4 cupgrated cheese

Steps

  1. 1

    Firstly wash and cut eggplant 🍆 into two half lengthwise.

  2. 2

    Now give a 2-3 deep cut vertically and horizontal.

  3. 3

    Now heat 1/2 cup of oil in a pan and shallow fry eggplant 🍆 on low flame 🔥 till they are well fried.
    Remember it should be on low flame or else it will not tender inside.

    Keep flipping the sides and fry both the sides well.

  5. 5

    Now coarsely grind green chillies finely cut onion and make a puree of tomatoes.

  6. 6

    Now heat 1 tbsp of oil and saute garlic and chillies then add onion and saute till it turns slightly light brown.

  7. 7

    Now add the dry spices and mix well and cook for 2 mins keep stirring continuously.

  8. 8

    Now add 1/2 cup of water and cook on low flame 🔥 till onions are tender and the spices are well combined to onions.

  9. 9

    Now add the tomato puree and let it cook on low flame till it's well cooked and tomatoes onion are well combined to each other and it's a thick gravy type.Off the flame

  10. 10

    Now with the help of a spoon spread the gravy over each eggplant see that it goes inside well.

  11. 11

    In this way fill all the eggplant
    Now place the eggplant on a fry pan put it low flame.

  12. 12

    Garnish with coriander leaves and some cheese.

  13. 13

    Cover the oan with the lid and cook for 4-5 mins.

  14. 14

    Yummilious eggplant bhartha boat 🚣‍♀️ is ready to serve with hot chappati or nan.
