This recipe originates in Catalonia, I adapted it as I love the combination of balsamic vinegar, smoked garlic and peanuts .I was given an almond version by friends of mine they serve it on a hot clay roof tile warmed on the outside grill . I prefer the robust and crunchy flavour of the peanuts with the sweetness of the onions .

My favorite go to when I'm hungry and want a quick lunch. I really like it because you can add anything you have in your fridge and adjust it to your taste.

I spent a summer with my great aunt. One night, she made me, a dish from the 1950's that she called "Minute Rice Casserole". She said the recipe used to be on the back of the box of minute rice. My grandmother called them porcupines and I liked the sound of that better. These are very affordable to make but no matter what I tried always so bland. One day I was at the store and discovered a spice mix for Nasi Goreng. Something clicked and I said I wonder if that would make porcupines more tasty. I made plain ones today but you can also add peppers, onion, and/or tomatoes. Also very good with ground beef, it just takes a bit longer to cook.
