This is my version of Duck/Plum Sauce.

Ingredients

  1. Sauce part I
  2. 6 ouncesplums
  3. 1/3 cupapple cider vinegar
  4. 1/3 cupsugar
  5. 1/2 teaspoongranulated garlic powder
  6. 1 teaspoonsalt
  7. 2 tablespoonsbrown sugar
  8. 1/2 teaspoonmustard powder
  9. 1/4 teaspoonground cinnamon
  10. 1 tablespoonsoya sauce
  11. Sauce part II
  12. 6 ouncesdried pitted apricot
  13. 1/3 cupapple cider vinegar
  14. 1/3 cupsugar
  15. 1/2 teaspoonsalt
  16. 2 tablespoonsbrown sugar
  17. 2 tablespoonsChinese black vinegar
  18. 1/2 teaspoonground ginger powder
  19. If needed
  20. As neededwater to thin the sauce

Cooking Instructions

  1. 1

    Halve and Pitt the plums. Sprinkle with a little salt. Add to a pot.

  2. 2

    Add the rest of the sauce ingredients part I, to the pot. Simmer 20 minutes.

  3. 3

    Check the dried apricots for pitts and pit fragments. Slice them in half.

  4. 4

    Add to a pot with the ingredients of sauce part II. Simmer 20 minutes.

    Add to a blender both parts of the sauce. Blend till smooth. Thin with water if to thick. Chill in the refrigerator overnight.

    If possible make this the day before. Serve with Duck, Chicken, Turkey, Pork, and Lamb. I hope you enjoy!!!

With the plums can they be frozen before hand
