It's wonderful to enjoy a savory dish on a rainy day. Since I had pork loin and fresh green peppercorns at home, I made a family meal with braised pork with green peppercorns, pickled cabbage and carrot, and Malabar spinach soup with dried shrimp.

Ingredients

  1. 1.5 lbspork loin
  2. 3 sprigsfresh green peppercorns
  3. Shallots, garlic, seasonings
  4. 1 bunchMalabar spinach
  5. 1small bowl dried shrimp
  6. 5 leavescabbage, thinly sliced
  7. 1carrot, thinly sliced + a few garlic chives

Steps

    Braised Pork with Green Peppercorns: Rinse the pork and cut into cubes. Marinate with 2 tablespoons fish sauce, 1 tablespoon sugar, 2 teaspoons seasoning powder, thinly sliced shallots, and minced garlic. Mix well and let marinate for 20 minutes. Once marinated, add the pork to a pan and stir until the meat firms up. Adjust the seasoning to taste. Add the green peppercorn sprigs, reduce to medium heat, and simmer until the pork is tender and flavorful.

    Soak the dried shrimp until softened, then pound or chop finely. Add to a bowl of boiling water. Wash and chop the Malabar spinach. Once the water boils, season to taste, add the spinach, let it boil briefly, then turn off the heat.

    Pickled Cabbage and Carrot: Wash and finely slice the cabbage, carrot, and garlic chives. Place in a bowl of filtered water with 2 tablespoons salt and mix well. Add the vegetables and press them down so they're fully submerged. It's best to pickle them a day in advance for the right level of tanginess.
