Curd Veggies Curry - A traditional odia curry

This is more of a dish which makes me nostalgic each single time the curry has been cooked or being talked about because the recipe is from my late grandmother's kitchen and she used to cook this curry with sheer delight
whenever we used to visit her in our summer vacation..
The special thing about the curry was she never used any store bought dairy products rather she was having her own cattle to provide for, her homemade curd was to die for which is the star ingredient of the curry, I used to devour it to my heart's content when my mom and sister used to cook this curry but gradually I fall for it more when I learnt from them over the phone conversation post my wedding, now I cook it for my family and relatives and when I host lunch for friends too, then this curry stood out among all due to it's authentic taste, still I believe her version was the best and it's hard to carry forward her legacy.

Steps

Blend the curd and besan together to form a smooth batter.

Cut all the above-mentioned veggies into medium cubes and start shallow frying them one by one adding salt and turmeric into them.

Ladies finger, Brinjal, patato, arum respectively. Then add 2 cups of water into the pan, boil pumpkin cubes for 5-6 minutes then add patato and arum into it.

Now it's turn to add the curd besan mix into it and stir everything nicely together.

Then heat a small tempering pan, heat some oil, add in cumin mustard seeds, pop them, add both the chillies one by one.

Add curry leaves and crushed garlic into it

Add in the fried green veggies into the curd mixture inside the pot(ladies finger and brinjal)

Mix and combine everything well Further adding tempering and red chilli powder into it.

Serve hot with steam rice😊
