In a large pot (2 gallons), add one gallon of water over medium heat.

Clean beef tripe and cow feet, and then add to pot of heating water. Add salt to water.

Clean the juanita maiz until clear. After 1 hour of beef tripe cooking, add the juanita maiz. Let it cook for 2- 3 hrs. Check beef tripe to determine if you'll need 2-3 hrs. While maiz is cooking, blend chiles

To make sauce: In the blender, add the 8-10 chile guajillos, 1 chile ancho/pasilla, plenty of water to blend, salt, 2 garlic cloves, pinch of oregano and blend. Once beef tripe is fully cooked, add the chili sauce to pot.

To make spicy red salsa: in the blender, add 25-30 chile de arbol, 1 garlic clove, salt.
