Cooking Instructions

Peel the potatoes and onion. Slice the onion into thin strips and the potatoes into 1/2-inch rounds. Boil them in a pot of salted water for about 10-12 minutes.

While they cook, preheat the oven to 430°F (220°C).

In an oven-safe baking dish (like Pyrex), beat the egg. Add salt, pepper, nutmeg, heavy cream, chopped parsley, grated garlic, and grated Manchego cheese. Mix everything well.

Drain the potatoes and onion, then add them to the baking dish. Mash lightly with a fork (do not make a purée), and mix well with the egg and cream mixture.

Bake with top and bottom heat for 5-7 minutes at 430°F (220°C). Then broil until golden brown to your liking. Ready to serve!
