Ingredients

  1. For the kibbeh dough:
  2. 1 1/2 cupsfine bulgur (about 255 grams)

  5. 1/4 cupkibbeh spice mix (kamouneh)
  6. Cold water, as needed for the bulgur
  7. 10 1/2 ozlean ground beef (about 300 grams)
  8. For the filling:
  9. 14 ozground beef (about 400 grams)
  10. 2large onions, finely chopped
  11. 1/2 cuppine nuts and finely chopped walnuts (the walnuts add great flavor, highly recommended)
  12. Salt, to taste
  13. 1 teaspoonseven spice blend, to taste
  14. Black pepper, to taste
  15. Olive oil
  16. For garnish:
  17. Pine nuts or almonds, as available
  18. To grease the baking dish and top:
  19. Olive oil
  20. Serve with:
  21. Lentil soup, yogurt and cucumber salad, or ayran (yogurt drink)

Cooking Instructions

    Soak the bulgur in water until it absorbs the liquid and softens.

    Grind the beef and onion together in a meat grinder until smooth.

    Add the ground beef to the bulgur and knead well by hand until the bulgur is almost mashed.

    Add salt and kibbeh spice mix, and knead the mixture thoroughly.

    To prepare the filling, heat a little olive oil in a skillet, sauté the onions until soft, then add the ground beef and cook through. Add salt, spices, and nuts, stir briefly, then remove from heat.

    Grease or spray a medium baking dish with olive oil.

    Divide the kibbeh dough in half. Press the first half evenly into the bottom of the dish, smoothing it with an oiled hand.

    Flatten the second half of the dough and place it on top (you can flatten it on plastic wrap first, then transfer it to the dish for easier handling).

    Brush the top generously with olive oil—this is important to keep it from drying out and getting tough when served.
