Ingredients

  1. 2.2 lbs (1 kg)starchy potatoes, thinly sliced with a mandoline or knife
  2. Olive oil and salt
  3. Black garlic aioli
  4. 1 cup (250 ml)sunflower oil or light olive oil
  5. 1.8 oz (50 g)black garlic
  6. Juice of 1/2 lemon
  7. Salt

Cooking Instructions

    Place a layer of salted potatoes on a baking sheet. Continue layering, adding a bit of olive oil between each layer, until you have 12 to 16 layers.

    Cover with parchment paper and place another baking sheet with weight on top. Bake at 300°F (150°C) for 30 minutes. Remove and let cool, ideally for 24 hours, or until completely cool.

    Cut into sticks and bake until golden at 400°F (200°C) for about 15 minutes. Garnish with the sauces.

    Prepare the black garlic aioli by blending all the ingredients without moving initially, then slowly emulsify until the desired texture is achieved.
