Rice with peanut butter

This is a traditional Zimbabwean recipe. İt's so filling that you can have it on it's own but we mostly serve it with green veggies and the traditional chicken stew. İ used leftover turkish rice for this that's why my rice has vermicelli in it. Please note that our peanut butter consists of just peanuts, salt and oil, no other fancy stuff.

Steps

  1. 1

    Wash your rice thoroughly

  2. 2

Add to saucepan with the water and salt. Don't put too much salt as the peanut butter is also salted.

  3. 3

Bring to boil on high heat and reduce the heat to low and simmer.

  4. 4

Make sure your rice is overcooked and when it has very little water left add the peanut butter and mix in thoroughly with a wooden spoon

  5. 5

When thoroughly blended, cover pot and leave on lowest heat for about 10minutes to allow the peanut butter to cook.

  6. 6

Mix in again before serving and enjoy

I discovered my love for cooking a few years ago. Since eating out is expensive i figured i had some learning to do. Living in a very small town(i doubt it can even be called that) where you cant always find what you wanted also pushed me towards doing it on my own. I am Zimbabwean by the way.I think the internet is the best invention ever since i can look up recipes, try and modify them to suit my preferences. I love sampling dishes from different countries and of course stories behind them
