Plantain Pancakes

I had some ripened plantains and I thought about making pancakes with them. I did a little research and saw that someone already had. But they said to stay away from ripened plantains... I found out that they were just trying to keep the good stuff to themselves. These pancakes aren’t as sweet as they would be with banana. But honestly, they’re sweet enough. You can even eat them with whipped cream cheese and smoked salmon.. use your imagination.

Ingredients

3 People
  1. 2Ripe Plantains
  2. 1 PintMilk
  3. 1Egg
  4. 3 Tbs.Melted Butter (1 More for cooking (4)
  5. Flour
  6. 1/4 CupSugar
  7. 1/2 Tbs.Cinnamon
  8. SplashVanilla Extract
  9. 1 Tbs.Baking Powder

Cooking Instructions

    Peel and chop plantains. Add them to food processor along with everything but the flour. Process until a relatively smooth consistency is achieved.

    Add to a large mixing bowl. Begin adding flour gradually. Whisk and check the consistency. As with normal pancakes, you don’t want it too runny or too thick. Find the balance you like. The amount of flour will depend on both your taste and the the size of the plantains. Pour your mixture onto a griddle pan brushed with melted butter. Cook until you see bubbles forming and the pancakes move freely when pan is shaken.

    Serve with maple syrup, jam, berries or whatever fits your fancy.
