Pepper Hot Veggie Rice with fried fish

Soak the rice is cold water for 20 minutes
Cut the peppers, onion, ginger, garlic, mint leaves and crush them in a chop chop or blender
Break the 3 eggs and mix them with the crushed spices + whole black pepper grains.
Beat the mix above to mix or blend (easier to blend)

Heat the butter in a pan and add the mix to scramble the veggie-egg mix till its separated and scrambled
Cut the carrot and green beans into tiny cubes and add to the scrambled egg-veggie mix. Stir for a few minutes.
Add the boiled maize grains, star spice and cumin seeds to the scrambled veggie-egg mix.

Boil water for the rice
Once water has boiled, add rice and let it boil for 5 minutes
Drain the water from the rice pot and cover the pot. Lett the rice steam for 20 minutes

Add the rice to the egg-veggie scramble and mix it. Cover the veggie rice and let it steam for 10 minutes
Fry your fish, make gravy the way you like it.
Serve and enjoy. 👌🏿👨🏿🍳
