Ingredients

  1. 2 cupspaneer cut into 1 inch cubes
  2. 1small red pepper thinly sliced
  3. 1small green pepper thinly sliced
  4. 1medium red onion thinly sliced
  5. 1/4 cupplain yogurt
  6. 1 tspginger grated
  7. 1 tspgarlic paste
  8. 1 tspred chilli powder
  9. 1 tspgaram masala
  10. 1/4 tspturmeric powder
  11. 1 tbspkasoori methi
  12. 1 tspsalt
  13. 6-8parathas cooked for wrape
  14. 1medium onion thinly sliced
  15. 1/2 cupcilantro chopped
  16. As requiredMint Cilantro chutney:
  17. 1/2 cupcilantro
  18. 1/4 cupmint leaves
  19. 2 tbspunsweetened coconut dry
  20. 1garlic clove
  21. 1/2 tspcumin seeds
  22. 1-2small green chiles
  23. 1 tbsplemon juice
  24. 1 tspblack salt
  25. 1 teaspoonsugar

Steps

  1. 1

    Marinate the paneer- Mix all the marinade ingredients in a bowl. Add paneer and mix well.

  2. 2

    Make the filling- Heat 2 tablespoons of oil in a pan.

  3. 3

    Add onions, peppers and 1/2 teaspoon of salt and cook for 3 to 4 minutes.

  4. 4

    Add marinated paneer and mix well. Cook for another 3 to 4 minutes. Turn the heat off. Add cilantro.

  5. 5

    Chutney – Blend all the chutney ingredients using 2 tablespoons of water to make a smooth sauce.

  6. 6

    Cook the Parathas- Heat a non-stick pan.

  7. 7

    Cook on medium high heat for about to 1 to 1-1/2 minutes on each side.pressing gently with a spatula.

  8. 8

    Assemble Kathi Roll- Spread 2 tsp of chutney on cooked paratha.

  9. 9

    Add 2 to 3 spoonfuls of the filling in the middle. Add few sliced onions and cilantro on top.

  10. 10

    Roll the sides up to the middle.
