To assemble: Using a removable cake ring, layer as follows—1 crêpe, sauce with avocado; 1 crêpe, sauce with tomatoes and pineapple; 1 crêpe, sauce with lettuce; 1 crêpe, sauce with sliced smoked salmon; 1 crêpe, sauce with crumbled hard-boiled eggs and cucumber.

Sprinkle with crispy fried onions and chill for at least 2 hours.
