Ingredients

8 servings
  1. 1 cupsweetened, flaked coconut, toasted
  2. 1regular pie crust, blind baked
  3. 3 cupshalf and half
  4. 1 cupsugar
  5. 1/2 cupflour
  6. 1/2 tspsalt
  7. 2eggs
  8. Vanilla
  9. 2 cupsheavy cream
  10. 4 tbsppowdered sugar

  1. 1

    Set oven to 350. Toast your coconut on a sheet pan, stirring occasionally. At the same time, bake your pricked pie crust til lightly browned. Set both aside to cool.

    In a medium saucepan, add the sugar, flour and salt and whisk together then add the 3 cups half and half, vanilla and 2 beaten eggs and whisk together on med/high heat until it comes to a boil and becomes very thick, stirring constantly. Remove from heat.

    Add half the toasted coconut to the custard and combine. Spread in the baked pie shell. I let mine cool a bit before covering in plastic wrap and allowing to chill for about 4 hours.

  4. 4

    To make the top I beat 2 cups heavy cream and 4 tbsp powdered sugar to stabilize the whipped cream. Once the pie was cold I added the cream on top and sprinkled the rest of the toasted coconut on top.

Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
