I've always wanted to make fried rice like the kind you get at a Chinese restaurant, but I haven't found the perfect recipe yet. But since I'm naturally curious, I experimented a bit and came up with this recipe for fried rice with anchovies and stink beans. I'm really happy with the taste, and the recipe is simple—no need for onions or garlic. It almost tastes like the fried rice you get at a Chinese restaurant. The anchovies are special because I used high-quality anchovies from @crystalofthesea. They are naturally white, without any bleaching chemicals, preservatives, or formaldehyde. Plus, these anchovies are high in calcium, which is great for bones and teeth. They are also high in protein, making them suitable for children over 1 year old, and of course, adults will love them too, hehe.

Heat enough oil to fry the anchovies. Fry the anchovies until cooked and crispy, then drain.

Reduce the oil used for frying the anchovies to about 2 tablespoons, then add sesame oil. Reheat the oil, using high heat to cook the fried rice, then add the eggs and scramble them.

Add the stink beans, green bird's eye chilies, and green onions, and stir well. Add the rice and stir again. Then add the fried anchovies and mix well.

Season with black pepper, oyster sauce, and soy sauce, and mix well. If the taste is right, there's no need to add more salt or flavoring, but adjust to your taste. Once the flavor is right, turn off the heat and serve.
