
Jan's Zucchini Bread

Jan is a friend of mine who was always baking, and was well known for it. She loved baking so much, that her family of 6 couldn't eat all she baked, and her freezer always had some overflow. One year, her husband made her make a New Years resolution to give up baking until they had managed to eat some of the frozen goodies in the freezer!
This can also be made in a food processor. If your kids won't eat it because of the green zucchini flecks in it, the food processor will purée them, so they aren't e prepared with a third loaf pan, because, even though my recipe card says two loaf pans, I could swear it makes 3 loaves.
This is my daughters' favorite recipe, and they both asked me for it.

Preheat oven to 350 degrees. Grease 2 loaf pans (9x5 or 10x4), flour lightly and shake out extra flour. Set aside.

Sift all dry ingredients together in large bowl and set aside.

Beat eggs and sugar together. Add oil, flavoring sand zucchini and mix. Slowly add dry ingredients. Add nuts and/or raisins, if using.

Pour batter into two loaf pans and place in preheated oven. Bake for one hour, or until a toothpick inserted in center comes out clean.
